Cannoli

Ingredients:

- Wrap the dough in plastic wrap and refrigerate for 1 hour.
- In a medium bowl, mix together the ricotta cheese, powdered sugar, vanilla extract, and chocolate chips until well combined.
- On a lightly floured surface, roll out the dough to 1/8 inch thickness.
- Cut the dough into 3 inch circles and roll each circle around a cannoli tube, pressing the edges together to seal.
- Heat the canola oil in a deep saucepan over medium heat until it reaches 350°F.
- Fry the cannoli tubes until golden brown, about 2-3 minutes.
- Remove the cannoli tubes from the oil and place on a paper towel-lined plate to cool.
- Once cooled, fill the cannoli shells with the ricotta mixture using a pastry bag.
