Ingredients:

3 tablespoons sesame paste or tahini
2 tablespoons chili oil
2 tablespoons light soy sauce
1 tablespoon dark soy sauce
1 tablespoon Chinese black vinegar
1 tablespoon sugar
1/4 teaspoon Sichuan peppercorn powder
1/4 teaspoon ground white pepper
2 cloves garlic, minced
8 ounces ground pork
8 ounces fresh Chinese egg noodles
2 tablespoons vegetable oil
1 teaspoon Sichuan peppercorns
2 scallions, chopped
Optional toppings: Sliced roasted peanuts, chopped cilantro, chili flakes
Instructions:

In a small bowl, whisk together sesame paste, chili oil, light soy sauce, dark soy sauce, black vinegar, sugar, Sichuan peppercorn powder and white pepper. Set aside.

In a medium bowl, mix together ground pork, garlic, 1 tablespoon of the soy sauce mixture and 1 tablespoon of vegetable oil.

Bring a large pot of water to a boil. Add the egg noodles and cook for 2 minutes. Drain and rinse with cold water.
