Flan Caramelo

  • Ingredients:
    • 4 large eggs
    • 1 cup granulated sugar
    • 1 tsp vanilla extract
    • 2 cups whole milk
    • 1 cup heavy cream
  • Preparation:
    1. Preheat oven to 350°F.
    2. In a medium saucepan, heat the sugar over medium heat, stirring constantly, until it melts and turns a golden brown color. This will take about 8-10 minutes.
    3. Pour the melted sugar into a 9-inch round cake pan, swirling it to coat the bottom and sides.
    4. In a large bowl, whisk together the eggs, vanilla extract, whole milk, and heavy cream.
    5. Pour the egg mixture into the cake pan over the caramel sauce.
    6. Place the pan in a large baking dish, and add enough boiling water to the baking dish to come halfway up the sides of the cake pan.
    7. Bake for 45-50 minutes, or until the flan is set.
    8. Remove from the oven and allow to cool to room temperature.
    9. Cover and refrigerate for at least 2 hours, or overnight.
    10. To serve, run a knife around the edges of the pan to loosen the flan, and invert onto a serving platter. The caramel sauce will be on top.
