Ma Po Tofu

Ma Po Tofu is a classic Chinese dish featuring silken tofu in a spicy, savory sauce made with ground pork, Szechuan peppercorns, and fermented bean paste. Rich and comforting, it’s a staple of Szechuan cuisine.

Ingredients:

  • 1 lb firm tofu, cut into cubes
  • 2 tbsp vegetable oil
  • 2 cloves of garlic, minced
  • 1 tbsp ginger, minced
  • 1/4 cup ground pork or beef
  • 2 tbsp Szechuan peppercorns, toasted and ground
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1/4 cup chicken broth
  • 2 green onions, sliced
  • 1 red bell pepper, sliced
  • 2 tbsp cornstarch mixed with 1/4 cup of water

Instructions:

  1. Heat the oil in a pan over medium-high heat. Add the garlic, ginger, and meat and cook until browned.
  2. Add the Szechuan peppercorns, soy sauce, rice vinegar, sugar and chicken broth and bring to a boil.
  3. Add the tofu and cook until heated through.
  4. Add the green onions, red bell pepper and cornstarch mixture and cook until the sauce thickens.
  5. Serve with steamed rice.
