Mahshy
Mahshy is a traditional Egyptian dish that is known for its savory flavors and aromatic spices. Made with grape leaves, rice, and a variety of seasonings, Mahshy is a flavorful and filling main course that is often served during special occasions.

Ingredients:
- 1 cup of long-grain rice
- 1 cup of freshly squeezed lemon juice
- 1/2 cup of olive oil
- 1 tsp of salt
- 1 tsp of black pepper
- 1 tsp of ground cumin
- 1 tsp of paprika
- 1 tsp of ground coriander
- 1 tsp of ground cinnamon
- 20 grape leaves
- 1/2 cup of chopped parsley
Instructions:
- Rinse the rice and set it aside to drain.
- In a medium saucepan, heat the olive oil over medium heat.
- Add the salt, pepper, cumin, paprika, coriander, and cinnamon to the pan and stir well.
- Add the rice to the pan and cook, stirring constantly, until the rice is well coated with the spices and the oil.
- Spread a thin layer of the rice mixture onto each grape leaf, leaving a 1/2-inch border around the edges.
- Roll the grape leaves around the rice mixture and place them into a large saucepan.
- Pour the lemon juice over the top of the grape leaves, then add enough water to cover the leaves.
- Cover the saucepan and simmer for 30-35 minutes, or until the grape leaves are tender and the rice is cooked through.
