Matapa

Matapa is a traditional dish from Mozambique. It is made with cassava leaves, peanuts, and spices, creating a unique blend of savoury and nutty flavours. This dish can be served as a main course or a side dish, and is often enjoyed during special events and celebrations.

-Ingredients:
-1 cup cassava leaves, chopped
-1/2 cup peanuts,crushed
-2 cloves garlic, minced
-1 onion, chopped
-1 tbsp palm oil
-1 tsp salt
-1 tsp red pepper flakes
-1 tsp coriander
-1 tsp cumin

-Instructions:
1. In a pan, heat the palm oil and add the onion, garlic, and spices. Cook until the onion is soft.
2.Add the peanuts and cook for another minute.
3. Add the cassava leaves and cook for about 5-7 minutes or until the leaves are wilted.
4. Season with salt and pepper to taste.
