Mishkaki

Ingredients:

  • 1 pound beef, chicken, or goat meat, cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 1/4 cup tomato paste

  • 1 teaspoon ground cumin

  • 8 wooden skewers, soaked in water for 30 minutes

Instructions:

  1. In a large bowl, mix together the soy sauce, tomato paste, lemon juice, olive oil, cumin, paprika, garlic powder, salt, and pepper.
  2. Add the meat cubes to the marinade and mix to coat evenly. Let it marinate for at least 30 minutes, or up to 4 hours.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated meat onto the soaked wooden skewers, about 4 pieces per skewer.
  5. Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the meat is cooked through and the outside is slightly charred.
