Sancocho

Sancocho
  • 2 lbs beef, chicken or pork
  • 3 cups of chopped yucca
  • 2 chopped potatoes
  • 1 chopped plantain
  • 2 chopped carrots
  • 2 chopped celery sticks
  • 2 chopped onions
  • 2 cloves of garlic
  • 1 tablespoon of cumin
  • Salt and pepper to taste
  • 6 cups of water or broth
  • 2 tablespoons of cilantro

Instructions:

  1. Cut the meat into large pieces and season with salt, pepper, and cumin.
  2. In a large pot, bring 6 cups of water or broth to a boil and add the meat.
  3. Once the meat is cooked, add the chopped root vegetables and let simmer for 20 minutes.
  4. Finally, add the garlic, cilantro, and season to taste.
  5. Serve with a side of rice or avocado.
