Szechuan Fish
Szechuan Fish is a traditional Chinese dish that features white fish fillets coated in a savory and spicy sauce, infused with the distinctive Szechuan peppercorn flavor, garlic and ginger. It is often served with steamed rice.

Ingredients: (4 servings)
- 1 lb white fish fillets, cut into bite-size pieces
- 2 tbsp cornstarch
- Salt and pepper
- 2 tbsp oil
- 2 cloves of garlic, minced
- 1 tbsp ginger, minced
- 2 tbsp Szechuan peppercorns, toasted and ground
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1/4 cup chicken broth
- 2 green onions, sliced
- 1 red bell pepper, sliced
Instructions:
- Season the fish with 1 tbsp of cornstarch, salt and pepper.
- Heat oil in a pan over medium-high heat. Add the fish and cook until golden brown and cooked through. Remove from the pan and set aside.
- In the same pan, add garlic, ginger, Szechuan peppercorns and cook until fragrant.
- Add soy sauce, rice vinegar, sugar and chicken broth and bring to a boil.
- Add the fish back to the pan, along with the green onions and red bell pepper. Cook until the sauce thickens and the vegetables are tender.
- Serve the fish with steamed rice.

In general, it will be a good source of protein from the fish and some vitamins and minerals from the vegetables. However, it’s also high in sodium from the soy sauce and may be high in fat depending on the type of oil used.
