Tiramisu

Tiramisu, a classic Italian dessert, is made of creamy mascarpone cheese, espresso-soaked ladyfingers, and dusted with cocoa powder. Ingredients:

  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 2/3 cup milk
  • 1 1/4 cups heavy cream
  • 1 pound mascarpone cheese
  • 1/4 cup strong brewed coffee
  • 2 tablespoons rum
  • 24 ladyfingers
  • 2 tablespoons cocoa powder

Instructions:

  1. In a medium saucepan, whisk together egg yolks and sugar.
  2. Stir in milk and cook over medium heat, stirring constantly, until mixture thickens and coats the back of a spoon, about 8-10 minutes.
  3. Remove from heat and let cool.
  4. In a large bowl, beat heavy cream until stiff peaks form.
  5. In a separate bowl, beat mascarpone cheese until smooth.
  6. Gradually fold in the whipped cream into the mascarpone mixture.
  7. In a shallow dish, combine coffee and rum.
  8. Dip each ladyfinger into the coffee mixture and place them in a single layer in a 9×13 inch dish.
  9. Spread half of the mascarpone mixture over the ladyfingers.
  10. Repeat with another layer of ladyfingers and mascarpone mixture.
  11. Dust with cocoa powder and refrigerate for at least 2 hours, or overnight.
