Tortilla española

Tortilla española, also known as Spanish omelette, is a classic dish originating from Spain. Tortilla española

Ingredients:

  • 4 large potatoes, peeled and thinly sliced
  • 1 medium onion, chopped
  • 6 large eggs
  • 1/2 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large non-stick pan, heat the olive oil over medium heat.
  2. Add the chopped onions and sliced potatoes and cook until they are soft and slightly browned, about 15-20 minutes.
  3. In a large bowl, beat the eggs, salt and pepper together.
  4. Add the cooked onions and potatoes to the beaten eggs and mix well.
  5. Pour the mixture back into the pan and cook for about 10 minutes over low heat.
  6. Place a plate on top of the pan, and carefully flip the pan to transfer the tortilla onto the plate.
  7. Slide the tortilla back into the pan and cook for another 5 minutes until the other side is lightly browned.
  8. Remove from heat and let cool for a few minutes before slicing and serving.
